Our suppliers

Know your fisherman

We cook within a twenty-mile stretch of coast. These are the people whose names are behind the menu, and the reason it changes with the weather.

Harbour Tide Fisheries

Day-boat fish · Wells-next-the-Sea

Skipper Dave Rudd lands sole, bass and brill at first light. His call reaches the kitchen before the boat has tied up.

Creekside Oyster Beds

Native & rock oysters · Brancaster Staithe

Grown in the tidal creek for three years. Opened to order, never earlier, and always with a view of where they came from.

Marsh Lane Growers

Samphire & salad leaves · Holme-next-the-Sea

Wild samphire is hand-picked from the marsh each July; the rest of the year their polytunnels keep us in greens.

Sandringham Dairy Co.

Butter, cream, cheese · West Norfolk

Cultured butter churned twice a week and the soft rind cheeses that finish every cheese plate.
